Introduction to Nutrition will cover a diverse number of topics within the area of nutrition including macronutrients, digestion and absorption, metabolism, weight management, nutrition through the lifespan, eating disorders, food safety and technology, and food politics. The course is divided into twelve weeks. Each week, the student will be assigned textbook readings and internet research, and will take quizzes to summarize important topics. The course also requires the completion of two projects. The first project is a case study, and the second project will require the student to analyze their own diet. Both projects will require use of the Diet Analysis Plus program. In addition, students will be required to use the classroom chat function to discuss current topics in nutrition.

Required Texts: The Science of Nutrition" by Thompson, Manore, and Vaughan, and the required software is My Diet Analysis Version 2.0.
